This recipe features a traditional Indian Mutton Biryani, prepared outdoors over a wood fire. Tender marinated goat meat is layered with aromatic basmati rice and a rich blend of hand-ground spices, then slow-cooked to perfection.

- Hand-ground biryani masala1.5 cups
- Onions10-12 large onions, sliced
- Oil4 cups
- Homemade ghee1 cup
- Coriander leaves2 cups, chopped
- Mint leaves1 cup, chopped
- Green chilies1.5 cups
- Hand-ground ginger and garlic paste2 cups
- Tomatoes8-10 large tomatoes, sliced
- Hand-ground turmeric paste0.5 cup
- Water10-12 cups

- Basmati rice5-7 kg
- Saffron1 teaspoon
- Cashew nuts1 cup

Directions
- Cut the whole goat into mutton meat pieces.
- Transfer the cut mutton meat to a large pot.
- Wash the mutton meat thoroughly with water.
- Transfer the washed mutton meat to a large tray.
- Add curd to the mutton meat.
- Mix the curd into the mutton meat by hand.
- Add lemon juice to the mutton meat.
- Mix the lemon juice into the mutton meat by hand.
- Cover the marinated mutton meat with a lid and set aside.
- Grind red chilies into a paste on a stone grinder.
- Dry roast the whole spices (cinnamon sticks, bay leaves, green cardamom, black peppercorns, fennel seeds, star anise, cloves) in a large wok over a wood fire.
- Transfer the roasted spices to a plate.
- Grind the roasted whole spices on a stone grinder to make biryani masala powder.
- Thinly slice the onions.
- Heat oil in a large wok over a wood fire.
- Deep fry a portion of the sliced onions until golden brown.
- Remove the fried onions from the oil and set aside.
- Place a large cooking pot over a wood fire.
- Add coconut oil to the pot.
- Add homemade ghee to the pot.
- Add the whole spices (cinnamon sticks, bay leaves, green cardamom, black peppercorns, fennel seeds, star anise, cloves) to the hot oil and ghee.
- Add the remaining sliced onions to the pot.
- Sauté the onions until translucent.
- Add chopped coriander leaves and mint leaves to the pot.
- Sauté the herbs with the onions.
- Add green chilies to the pot.
- Sauté the green chilies.
- Add hand-ground ginger and garlic paste to the pot.
- Sauté until fragrant.
- Add sliced tomatoes to the pot.
- Sauté until softened.
- Add hand-ground turmeric paste to the pot and mix well.
- Add hand-ground chili paste to the pot and mix well.
- Add the marinated mutton meat to the pot.
- Mix the mutton thoroughly with the spice mixture.
- Add hand-ground biryani masala to the pot.
- Mix the biryani masala into the mutton.
- Add a portion of the fried onions to the mutton mixture.
- Mix well.
- Add water to the pot.
- Add crystal salt to taste.
- Cover the pot with a lid and cook until the mutton is tender.
- Check if the mutton is tender.
- Transfer the cooked mutton curry to a separate pot.
- Place another large pot over a wood fire.
- Add water to the pot.
- Add whole spices (cinnamon sticks, bay leaves, green cardamom, black peppercorns, fennel seeds, star anise, cloves) to the water.
- Add saffron to the water.
- Cover the pot and bring the water to a boil.
- Wash the basmati rice thoroughly.
- Add the washed basmati rice to the boiling water.
- Add lemon juice to the rice.
- Add crystal salt to the rice.
- Parboil the rice until partially cooked.
- Drain the parboiled rice using a basket.
- Add a layer of parboiled rice to the large cooking pot.
- Spread a layer of mutton curry over the rice.
- Add another layer of parboiled rice.
- Spread another layer of mutton curry.
- Add the final layer of parboiled rice.
- Sprinkle chopped coriander and mint leaves over the rice.
- Sprinkle fried onions over the rice.
- Sprinkle cashew nuts over the rice.
- Drizzle homemade ghee over the rice.
- Spread another layer of mutton curry.
- Add another layer of parboiled rice.

- Serve the mutton biryani on banana leaves.
- Garnish with boiled eggs.
