Directions
- Heat a wok over high flame until smoking.
- Add a ladle of cooking oil to the hot wok, swirl to coat, then pour out the excess oil, leaving a thin layer.
- Crack one egg into a ladle and then carefully slide it into the hot wok.
- Scramble the egg with a spatula, breaking it into small pieces.
- Add chopped garlic, chopped onion, and shrimp to the wok.
- Stir-fry until fragrant and shrimp are cooked.
- Add chopped green onions to the wok and stir-fry briefly.
- Add a bowl of cooked rice to the wok.
- Break up the rice with the spatula and mix it thoroughly with the other ingredients, tossing constantly.
- Add a pinch of salt, white pepper, and sugar to the fried rice.
- Continue to stir-fry and toss the rice vigorously until it is evenly mixed and slightly browned.
- Transfer the fried rice from the wok to a serving plate.
- Garnish with black pepper.
