  • Oila little bit
  • Saltgenerously
  • Waterabout 1/2 cup
  • Carrots3 medium, diced
  • Onion1 large, diced
  • Celery sticks3 medium
  • Garlic cloves4, minced
  • Buttera couple tablespoons
  • Mushroomsabout 10, thinly sliced
  • Flour2 tablespoons
  • Red wine1 cup
  • Tomato sauce1 cup
  • Worcestershire saucea few tablespoons
  • Smoked paprika1 teaspoon
  • Sugar1/2 tablespoon
  • Italian herbs2.5 teaspoons
  • Black peppersome cracked
  • Beef broth4 cups
  • Baby potatoesabout 2 cups
  • Frozen sweet peas1 cup
  • Freshly chopped parsleya little bit

Directions

  1. Preheat a large frying pan over medium-high heat.
  2. Add oil to the pan.
  3. Add beef to the pan and season generously with salt.
  4. Brown the beef for about 7-10 minutes until well browned and seared all over.
  5. Transfer the browned beef into a large pot.
  6. Deglaze the frying pan with about 1/2 cup of water, scraping up caramelized bits, then pour the deglazing liquid into the pot with the beef.
  7. Add more oil into the frying pan.
  8. Add diced carrots, diced onion, and diced celery to the pan and sauté for about 4-6 minutes until onions soften and become translucent.
  9. Add minced garlic to the pan and cook for about 1 more minute.
  10. Transfer the sautéed mirepoix and garlic into the pot with the beef.
  11. Add a couple of tablespoons of butter to the frying pan and let it melt.
  12. Add thinly sliced mushrooms to the pan and brown them for about 4-5 minutes.
  13. Season mushrooms with a little bit of salt.
  14. Add 2 tablespoons of flour to the mushrooms, toss them with flour, and cook for about 1 minute.
  15. Transfer the cooked mushrooms into the pot.
  16. Add 1 cup of red wine, 1 cup of tomato sauce, a few tablespoons of Worcestershire sauce, 1 teaspoon of smoked paprika, 1/2 tablespoon of sugar, and 2.5 teaspoons of Italian herbs to the pot.
  17. Season generously with about 1.5 tablespoons of salt and some cracked black pepper.
  18. Pour in 4 cups of beef broth.
  19. Stir all ingredients in the pot until well combined.
  20. Close the pot with a lid and bring the stew to a boil over high heat.
  21. Once it starts to boil, turn the heat down to low and let it simmer for about 1 to 1.5 hours.
  22. Add about 2 cups of baby potatoes and 1 cup of frozen sweet peas to the stew.
  23. Cook the stew for another 20 minutes until the potatoes are fork-tender.
  24. Finish with a little bit of freshly chopped parsley.
  25. Serve the beef stew.

Tips

  • The longer you let the stew simmer, the softer and more tender the meat will be.
  • Let the stew cool down a bit before digging in to enjoy.
