This classic beef stew recipe features tender slow-braised beef, potatoes, mushrooms, carrots, and peas in a rich, flavorful broth. It's a warming and hearty dish perfect for colder weather.

- Beef tri-tip or roast2 pounds

- Celery sticks3 medium
- Garlic cloves4, minced

- Mushroomsabout 10, thinly sliced
- Flour2 tablespoons
- Red wine1 cup
- Tomato sauce1 cup
- Worcestershire saucea few tablespoons
- Smoked paprika1 teaspoon
- Sugar1/2 tablespoon
- Italian herbs2.5 teaspoons
- Black peppersome cracked
- Beef broth4 cups
- Baby potatoesabout 2 cups
- Frozen sweet peas1 cup
- Freshly chopped parsleya little bit

Directions
- Preheat a large frying pan over medium-high heat.
- Add oil to the pan.
- Add beef to the pan and season generously with salt.
- Brown the beef for about 7-10 minutes until well browned and seared all over.
- Transfer the browned beef into a large pot.
- Deglaze the frying pan with about 1/2 cup of water, scraping up caramelized bits, then pour the deglazing liquid into the pot with the beef.
- Add more oil into the frying pan.
- Add diced carrots, diced onion, and diced celery to the pan and sauté for about 4-6 minutes until onions soften and become translucent.
- Add minced garlic to the pan and cook for about 1 more minute.
- Transfer the sautéed mirepoix and garlic into the pot with the beef.
- Add a couple of tablespoons of butter to the frying pan and let it melt.
- Add thinly sliced mushrooms to the pan and brown them for about 4-5 minutes.
- Season mushrooms with a little bit of salt.
- Add 2 tablespoons of flour to the mushrooms, toss them with flour, and cook for about 1 minute.
- Transfer the cooked mushrooms into the pot.
- Add 1 cup of red wine, 1 cup of tomato sauce, a few tablespoons of Worcestershire sauce, 1 teaspoon of smoked paprika, 1/2 tablespoon of sugar, and 2.5 teaspoons of Italian herbs to the pot.
- Season generously with about 1.5 tablespoons of salt and some cracked black pepper.
- Pour in 4 cups of beef broth.
- Stir all ingredients in the pot until well combined.
- Close the pot with a lid and bring the stew to a boil over high heat.
- Once it starts to boil, turn the heat down to low and let it simmer for about 1 to 1.5 hours.
- Add about 2 cups of baby potatoes and 1 cup of frozen sweet peas to the stew.
- Cook the stew for another 20 minutes until the potatoes are fork-tender.
- Finish with a little bit of freshly chopped parsley.
- Serve the beef stew.
Tips
- The longer you let the stew simmer, the softer and more tender the meat will be.
- Let the stew cool down a bit before digging in to enjoy.
