Directions
- Pour 200g water into a bowl.
- Add 2g yeast to the water.
- Shake the bowl to mix the water and yeast.
- Add 260g bread flour to the bowl.
- Add 4g salt to the flour.
- Mix well with a spatula until a sticky dough forms.
- Add 15g olive oil to the dough.
- Mix well with a spatula until the olive oil is incorporated into the dough.
- Cover the bowl with plastic wrap and let it ferment for 30 minutes.
- Wet hands with water.
- Perform the first fold by gently stretching and folding the dough from four sides towards the center.
- Cover with plastic wrap and let it rest for 20 minutes.
- Perform the second fold by gently stretching and folding the dough from four sides towards the center.
- Cover with plastic wrap and let it rest for 20 minutes.
- Perform the third fold by gently stretching and folding the dough from four sides towards the center.
- Cover with plastic wrap and refrigerate the dough overnight.
- The next day, prepare a baking pan by pouring olive oil into it and spreading it evenly with a brush or hand.
- Transfer the dough from the bowl to the oiled baking pan.
- Gently fold the dough into a rectangular shape in the pan.
- Flip the dough over.
- Let the dough rest for 20 minutes.
- While the dough rests, slice 70g garlic.
- Place the sliced garlic in a pan.
- Add pepper to taste and 1g salt to the garlic.
- Add 20g olive oil to the garlic.
- Heat the pan on the stove and cook the garlic lightly until softened.
- Transfer the cooked garlic to a bowl to cool.
- After the dough has rested, gently stretch it to fill the baking pan.
- Place the baking pan in an oven (turned off) for final proofing for 1-2 hours.
- Once proofed, generously drizzle olive oil over the dough.
- Rub olive oil on hands.
- Use fingers to create indentations in the dough, making bubbles.
- Distribute the cooked garlic slices over the dough.
- Bake in a preheated oven at 230°C (450°F) for 20-25 minutes.
- Remove from oven and let cool slightly before slicing.
Tips
- When mixing the sticky dough, use a spatula.
- When folding the dough, be careful not to tear it.
