  • Dark soy sauce1 tablespoon
  • Sugarhalf a tablespoon
  • Gochugaru (Korean chili flakes)half a tablespoon
  • Toasted sesame oil1 tablespoon
  • Cooking oila small amount
  • Black peppera few dashes
  • Mayonnaiseas desired

Directions

  1. Add 1 tablespoon oyster sauce, 1 tablespoon dark soy sauce, half a tablespoon sugar, half a tablespoon gochugaru, and 1 tablespoon toasted sesame oil to a bowl and mix well to make the sauce.
  2. Slice the garlic.
  3. Julienne half an onion.
  4. Slice the green onion diagonally.
  5. Bring water to a boil in a pot.
  6. Once the water boils, add the udon noodles and boil for about 30 seconds. Then turn off the heat, drain, and set aside.
  7. Heat a small amount of cooking oil in a frying pan, add the sliced garlic, and stir-fry lightly over medium-low heat.
  8. Add the julienned onion, diagonally sliced green onion, and carrot, and stir-fry together.
  9. Add the cabbage and the pre-made sauce, and stir-fry quickly.
  10. Add the boiled udon noodles and stir-fry for about 2 more minutes.
  11. Turn off the heat, sprinkle a few dashes of black pepper, and finish.
  12. Serve the finished stir-fried udon with mayonnaise drizzled on top, as desired.
