Kid-friendly kimbap recipe, less salty version?

So my youngest saw kimbap in a lunchbox video (don't ask, YouTube algorithm strikes again) and now she won't stop asking me to make it! I've had regular sushi before but never tried making the Korean version at home, and I'm a little intimidated by rolling it without everything falling apart. Does anyone have a good beginner recipe that's not too salty or heavy on sesame oil, since my kids are picky about strong flavors? Also wondering if I can prep the fillings the night before since Chicago winters make me lazy about doing everything last minute! Any tips for rice ratio or what veggies actually hold up well for three kids' lunches would be huge.

For rice ratio, I do about 1 tbsp rice vinegar and 1 tsp sugar per 2 cups cooked rice, barely any salt, and just a light brush of sesame oil on the seaweed instead of mixing it into the rice. Carrots and spinach hold up best for three days of lunches in my experience, cucumber gets watery by day two.
