I am trying to make a fully vegetarian kimchi paste this time, but almost every recipe I find calls for saeujeot or some form of shrimp paste for depth. I tried adding a bit of fermented soybean paste instead, but the flavour felt too different from what I remember tasting at a Korean colleague's home.
