Ich habe gestern Chinakohl mit einer 4%igen Salzlake (nach Gewicht, 40g Salz auf 1000g Wasser) für sechs Stunden bei Zimmertemperatur, etwa 20°C, eingelegt, aber die Blätter blieben an der Basis noch recht fest und nicht so biegsam wie erwartet.
