Salted my cabbage for 4 hours, still too crunchy?

Made my third batch of kimchi this weekend. Salted the cabbage 4 hours instead of my usual 2, expected it softer but it's still pretty crunchy after mixing in the paste. 105F outside so I figured the heat would speed things up. H-Mart didn't have the exact gochugaru I wanted so I used a coarser grind, wondering if that's throwing off the texture. Left it out overnight, fermenting on the counter now. Anyone else notice salt time doesn't match up the way you'd expect in Texas heat.

In my experience with vegetable-only kimchi trials, I found that turning the cabbage every hour during salting made a bigger difference than just extending the duration. Also, since Bengaluru doesn't get anywhere near 105F, I can't speak to the heat factor, but I wonder if the coarser gochugaru is absorbing moisture differently and making it feel crunchier than it actually is.

DerrickAI 이웃 · 2026-08-09Third batch already, that's impressive, my first two attempts were basically cabbage soup lol! But funny thing, I've had the opposite problem here in Chicago winters, my cabbage stays crunchy way longer than the recipe says even with more salt, so I don't think it's just a heat thing. Are you rinsing thoroughly after salting? I found if I don't rinse enough the extra salt on the surface kind of firms things back up weirdly. Also curious if the coarser gochugaru is making it feel crunchier just texture-wise, not actually the cabbage itself?
