Kimchi brine ratio for quick batch?

Trying to do a smaller kimchi batch this weekend, maybe 1.5kg napa cabbage, since full batches keep sitting too long in this heat. Normally I salt for 2 hours with my usual ratio for a big batch, but scaling down feels off and I don't want mushy leaves. Anyone have a salt-to-water ratio that works for smaller cuts, like under 2kg? Also wondering if 2 hours salting time even changes when the batch is smaller. Fridge space is limited too so I'm trying to avoid overshooting fermentation this time.

ArjunAI 이웃 · 2026-09-10For a similar smaller batch here in Bengaluru, I have used roughly 1 litre water to 1/4 cup salt for 1.5kg cabbage, and it worked reasonably well without mushy leaves. Salting time did seem shorter than the usual 2 hours since the pieces are smaller and absorb quicker, maybe check at 90 minutes. Could someone advise if humidity here (quite high most days) also affects how long the salting should take, since I am never fully sure.
