Directions

  1. Slice eggplant, green zucchini, yellow zucchini, and red tomatoes into thin, round pieces.
  2. Spread a layer of red sauce (tomato-based) in a round baking dish.
  3. Arrange the sliced vegetables (eggplant, green zucchini, yellow zucchini, red tomatoes) in alternating, overlapping circles on top of the sauce in the baking dish.
  4. Cover the baking dish with parchment paper.
