- Oyster Sauce1 tablespoon🛒

- Oligosaccharide3 tablespoons🛒

- Tonkatsu Sauce3 tablespoons🛒
- Minced Garlic1 tablespoon🛒
- Water200 ml🛒
- Crushed Peanutsas needed🛒
Directions
- Remove the membrane from 1 kg of thoroughly washed pork back ribs.
- Place the pork back ribs in a pot and pour in 1.5 liters of water, enough to submerge them.
- Add 3-4 bay leaves, 10-15 whole black peppercorns, and 60 ml of soju. Boil for 30 minutes.
- Once the water boils, reduce heat to medium and skim off any foam.
- Lightly rinse the pork back ribs, which have been boiled for 30 minutes, in cold water.
- Cut the boiled pork back ribs into individual pieces by slicing between the bones.
- Prepare the seasoning sauce: In a bowl, combine 1 tablespoon oyster sauce, 1 tablespoon Korean plum extract, 2 tablespoons ketchup, 3 tablespoons oligosaccharide, 3 tablespoons soy sauce, and 3 tablespoons Tonkatsu sauce.
- Finely mince 1 tablespoon of garlic, add it to the seasoning sauce, and mix well.
- Place the cut pork back ribs in a pot, add the prepared seasoning sauce and 200 ml of water, and mix thoroughly.
- Once the sauce starts to boil, reduce heat to medium-low, cover, and simmer for 20 minutes.
- Stir occasionally while simmering to ensure the ribs are well coated with the sauce.
- Continue to simmer until the sauce has reduced to a thick consistency.
- Arrange attractively on a plate, then pour any remaining sauce from the pot over the ribs.
- Sprinkle with crushed peanuts for a more appetizing presentation.
Tips
- Removing the membrane from the pork ribs makes them much more tender and eliminates gamey odors.
- Skimming off the foam prevents gamey odors from permeating the meat.
- Once the sauce starts to boil, reduce heat to medium-low and simmer.
- Stirring occasionally while simmering helps the sauce penetrate the ribs well.
- Simmer until the sauce has reduced to a thick consistency, then it's done.
- Sprinkling with sesame seeds or nuts makes it more appetizing.
