Gamjajeon is a traditional Korean potato pancake. This recipe makes it easy and simple to prepare using just potatoes, onions, and potato starch. It boasts a wonderfully crispy and chewy texture, and is even more delicious when served with a spicy and tangy sauce.

- Potato1 large (about 225g)
- Soy sauce2 tablespoons
- Lime1/2
- Scallion1 stalk
- Onionabout 1/4 cup
- Jalapeño1
- Sugar1/2 teaspoon
- Salt1/4 teaspoon
- Potato starch1/4 cup
- Grapeseed oil2-3 tablespoons

Directions
- Combine 2 tablespoons soy sauce, juice from 1/2 lime, 1 stalk chopped scallion, a little thinly sliced onion, 1 thinly sliced jalapeño, and 1/2 teaspoon sugar. Mix well to make the sauce.
- Peel 1 large potato (about 225g) and submerge it in cold water.
- Grate the potato.
- Add 1/4 teaspoon salt to the grated potato and mix well.
- Grate about 1/4 cup onion and add it to the potato mixture, mixing well.
- Add 1/4 cup potato starch to the potato mixture and mix well.
- Heat 2-3 tablespoons grapeseed oil in a pan over medium heat.
- Pour the potato batter into the pan and spread it evenly with a spatula to form a 9-inch diameter pancake.
- Fry until the bottom is golden brown and crispy.
- Flip and fry the other side until golden brown and crispy.
- When you shake the pan and hear a crispy sound, turn off the heat and transfer the pancake to a plate.
- Cut the gamjajeon into 8 slices, like a pizza.
- Place a piece of gamjajeon on a plate, top with the prepared sauce, and enjoy.
