  • Sugar1.5 tablespoons
  • Salt1 tablespoon
  • Vinegar4 tablespoons (or 2 tablespoons double-strength vinegar)
  • Minced garlic1.5 tablespoons
  • Sesame seeds3 tablespoons

Directions

  1. Wash 2 large cucumbers (or 3 small ones) thoroughly and trim off the ends.
  2. Cut the cucumbers in half and place them in a zip-top bag.
  3. Using a rolling pin or a soju bottle, vigorously smash the cucumbers until they crack open.
  4. Roughly tear the smashed cucumbers along their natural cracks and place them in a bowl.
  5. Add 1.5 tablespoons sugar, 1 tablespoon salt, 4 tablespoons vinegar (or 2 tablespoons double-strength vinegar), and 1.5 tablespoons minced garlic.
  6. Grind 3 tablespoons of sesame seeds to release their nutty aroma, then add them to the bowl.
  7. Gently mix everything together with two spoons, and it's done.

Tips

  • It's delicious immediately, but it tastes even better if you let it chill in the refrigerator for a while.
