Directions

  1. Soak the perilla leaves in water for about 10 minutes, then shake each leaf and rinse thoroughly several times.
  2. Pour 1 cup of water into a large pot and place a steamer basket inside.
  3. Stack the perilla leaves 4-5 at a time and place them in the steamer basket.
  4. Steam the perilla leaves for 7 minutes on an induction cooktop at setting 7 (or medium-low heat on a gas stove).
  5. Once the steamed perilla leaves have cooled, neatly stack them and squeeze out excess water.
  6. Thinly slice the onion, and finely chop the green onion and spicy chili pepper.
  7. To the sliced onion, green onion, and spicy chili pepper, add dark soy sauce, garlic, sesame seeds, gochugaru (Korean chili flakes), and sugar, then mix well to make the seasoning sauce.
  8. In a wide dish, stack the perilla leaves two at a time, and spoon the seasoning sauce primarily over the vegetables.
