This Spam rolled omelet rice combines savory Spam with fragrant green onions. It's a delightful treat featuring salty and sweet Spam fried rice wrapped in a soft omelet, perfect for eating in one bite.

Directions
- Open the Spam can and remove the Spam.
- First, cut the Spam into thin strips.
- Submerge the cut Spam in hot water to remove excess saltiness, oil, and impurities.
- Slice the blanched Spam thinly, then turn and dice it.
- Pour cooking oil into a pan and heat it, then add the diced Spam and stir-fry.
- Once the Spam is stir-fried until golden brown, add 1 tbsp soy sauce, 1 tbsp mirin, and 1 tbsp oligo syrup (oligodang), then stir-fry and simmer until reduced.
- Take 30g of green onions and finely chop them.
- Crack 4 eggs into a bowl, add 1 tbsp tuna extract sauce (chamchi-aek), and sprinkle with black pepper.
- Whisk the eggs well, then add the chopped green onions and mix thoroughly.
- Add the stir-fried Spam to 2 servings of cooked rice and sprinkle with sesame seeds.
- Mix the Spam and rice thoroughly.
- Lay plastic wrap over a bamboo rolling mat, then place the Spam rice in an elongated shape.
- First, hold both sides of the plastic wrap and roll it to enclose the rice, then use the bamboo rolling mat to roll and press firmly to shape the rice so it doesn't fall apart.
- Pour a small amount of cooking oil into a pan and heat it, then pour in the green onion egg mixture and spread it thinly.
- Before the egg mixture sets, place the rice on it and gently and slowly roll it from one end.
- Once you've rolled it once, add more egg mixture by lifting the rolled part slightly and pouring it underneath.
- Once the newly added egg mixture is slightly set, continue rolling.
- Once fully rolled, press firmly to cook all sides thoroughly.
- Once cooked, remove from the pan and let it cool slightly.
- Once it has cooled and firmed up slightly, cut it into bite-sized pieces.
- Arrange nicely and drizzle with ketchup.
Tips
- Blanching Spam in hot water removes excess saltiness, oil, and impurities.
- Spam releases its own oil, so you can omit cooking oil when stir-frying.
- Before mixing Spam with rice, patting it dry with a paper towel helps the rice stick together better.
- When making the rolled omelet, don't rush; roll it patiently to achieve a beautiful shape.
